Blair Farms has raised many varieties of peas, but most go to the same market. They are harvested dry and sold either whole or split depending upon the market. We have raised a variety called marrow fat peas that is used in the snack food market and for “mushy peas” in the United Kingdom. Marrow fats are the peas that you eat with wasabi on them.

Peas are very good for the soil and our crop rotation because the put back the highest amount of nitrogen and take out the least amount of water. They are planted in the spring and can be harvested at the end of July or in the middle of August depending upon the variety. They are excellent in soups, and when picked green are very sweet creamed for our dinner table.
